Parsnips are locally grown and are now being freshly harvested. They are a root vegetable and are similar to carrot, celery and parsley. They have a tapered root similar to a carrot and a creamy/white skin and flesh with a leafy top. Parsnips provide an excellent source of vitamin C, vitamin E (both antioxidants) and dietary fibre.
Parsnips are best sored in the fridge in a perforated plastic bag .
